Bran Muffin by Randolph Heights teacher wins SPPS breakfast contest
Jacklyn Lynch, a pre-kindergarten teacher at Randolph Heights Elementary, is the winner of Saint Paul Public Schools' breakfast recipe contest with a healthy and delicious Bran Muffin

SPPS' Employee Wellness coordinated the contest, with HealthPartners sponsoring the event. In January, 20 recipes were narrowed down to five based on nutritional criteria. These top five recipes were then prepared for a judging panel to select the top three recipes.

The judging panel consisted of a Registered Dietitian from Nutrition Services, a representative from Student Wellness, a parent of an SPPS student, a chef from Cooks of Crocus Hill, and a representative from Ramsey County Public Health.

The top three recipes that were selected to move forward were then prepared by Nutrition Services staff during National Breakfast Week ( March 3-7) at four school locations: Saint Paul Music Academy, Barack and Michelle Obama Elementary, Battle Creek Middle School and EXPO Elementary. At each of these sites SPPS students were able to sample and vote for their favorite.

Jacklyn Lynch, Mary Bejblik and Judith Kerrigan-Krodel were selected as the top three recipe winners. The delicious Bran Muffin took first place. Hercules Oatmeal, submitted by Mary Bejblik, placed second; and the Potato & Garbanzo Bean Curry, submitted by Judith Kerrigan-Krodel, placed third.
